Dean Chiotti, Master Baker, comes form a long line of Italian bakers. The baking tradition begins with
Michelangelo Dompe in 1687 in Pagno , Italy. This tradition continues in italy until present time. A relative,
Marcella Dompe being female, could not inherit property. She married a baker and was given passage to America
as a wedding present. Upon arrival in America, her husband Joe Chiotti, went to work for Marcella's brother-in-law,
Alessio Chiotti, president of the French Baking Company at 607 SW 6th Ave. In 1915 Joe and his brother opened the New
French Bakery at SE Hawthorn at Grand Ave. Joe and Marcella's sons Connie and Mike started Pierres French Bakery
in 1937, a well- known institution in Portland.
In 1970 Dean, Connie and Anne Chiotti's son, his cousins Jack and
Bill bought into Pierre's and for twenty years baked excellent bread and rolls for Portland's top restaurants
and hotlels. In 1992 Pierre's merged with Gais Bakery in Seattle. In 2003 Dean began Alessio Baking Company
back in the old SE Italian neighborhood. Alessio's provides extrodinary bread and rolls for Portland's finest
and most discerning eating establishments.
